‘Côtelettes d’agneau‘ are lamb chops, or literally, ‘chops of lamb’. Note that ‘agneau’ and ‘côtelettes’ are nouns, which is why they do not have to agree in gender.
You can see a relationship between the French word ‘agneau’, and the Italian word, which is ‘agnello‘. It comes from the Latin ‘agnus’, which means ‘lamb’. The Spanish word is completely different – it is ‘cordero‘.
