| What is "Aïoli"? | ‘Aïoli’ is an emulsion type sauce made from garlic (‘ail‘ in French) pounded with olive oil and raw egg yolks – you could describe it as a mayonnaise with a strong garlic flavour. Don’t confuse it with ‘anchoïade‘ which contains no egg yolks, and, in addition to olive oil and garlic, also contains anchovies. ‘Aïoli’ is typical of the cuisine of Provence, and an essential accompaniment to ‘bourride‘ – a well-known regional fish soup. aïoli ah/yoh/lee
