What is "arista"?

‘Arista’ is the name given to roast loin of pork typical of Tuscany. The stress is on the first syllable of this word.

This word is derived from the Greek word ‘aristos’ which means ‘best’. According to an Italian friend, this is the story: 15th Century, Florence: A Greek Orthodox priest declared the loin of pork he was served to be ‘arista!’, and the name stuck.
