What is "Carême"?

Carême was born Marie-Antoine Carême in Paris in 1784, but always called himself ‘Antonin’. He came from a very poor family, and starvation was a close companion. He was still a young boy when his father left him at local restaurant to fend for himself.

Carême rose to become the first celebrity chef, and is still remembered for his luxurious style of cooking and magnificent pièce montées which were the focal point at his grand banquets.
