| What is "Cava"? | Cava is a type of Spanish sparkling wine. It may be white, or pink, and is produced in the Penedès region of Catalonia. The name of these wines is protected by Denominación de Origen laws, and their production is strictly regulated. All cava wines must be made by bottle fermentation (méthode champenoise).The name ‘cava’ means ‘cellar’ in Spanish. See also vino espumoso, and vino de aguja.
