|What is "Comté"?|
‘Comté’ is a hard cow’s milk cheese similar to Gruyère. It melts well, and is good when used in traditional fondues. It is versatile and can be found on cheese-boards, salads, and it hot dishes – grated, sliced and diced. It originates in the Franche-Compté region of France and is sometimes called Compté Gruyère.
Compté is an ancient cheese, with records showing it was made in France at least as long as 800 years ago. This creamy coloured, nutty flavoured cheese which has a minimum 45% fat content is subject to strong quality controls and the protection of the French Appellation d’Origine laws.
