‘Forelle’ is German for ‘trout’ and ‘blau’ means blue – so literally translated Forelle Blau is ‘blue trout’. This dish is made by cooking a freshly killed, unscaled trout in stock with some vinegar added – you will not get the same result with an older trout. The scales turn blue while cooking as a result of this method – hence the name.
