'Gruyère' is a Swiss cow’s milk cheese very similar to 'Emmenthal', and Comté which is known as 'French Gruyère'. AOC laws state that Gruyère is Swiss, not French. It melts very well, which makes it a favorite in cooking. It can be used in dishes such as fondue and croque monsieur. Gruyère also makes an excellent table cheese.
