What is "palmiers"?
‘Palmiers’ *(m) is French for ‘palm trees’. In French cooking, it refers to puff pastry (pâte feuilletée) biscuits. The pastry is rolled from both sides into the middle, then cut into slices, and sprinkled with castor sugar. The palmiers are baked in a hot over, until the pastry is done, and the sugar has caramelized. In some parts of the English speaking world, ‘palmiers’ are referred to as ‘pig’s ears’.
