What is "pico de gallo"?
Pico de gallo is a fresh salsa or relish made from chopped tomatoes, onion and chilis – it is usually sharpened with lime juice or vinegar, and cilantro is added for flavor. Ingredients can vary – mango, cucumber, and so on. ‘Pico’ means ‘beak’ and ‘gallo’ is Spanish for a ‘rooster’ – so you translate it as ‘Rooster’s beak’. Pico de gallo is used as a condiment to Mexican dishes much in the same way as sambals are eaten with curry in India. It adds a sharp and refreshing note to dishes.
