What is "Sauces au Beurre"?
‘Sauces au Beurre’ means ‘Sauces with Butter’. It refers particularly to the rich sauces made with egg-yolks whisked over a gentle heat, to which either softened or clarified butter is added little by little. These sauces are never thickened with flour. They may be sharpened with a little lemon juice or vinegar.
