| What are "tamales"? | Tamales are made by mixing a corn dough called masa with lard or other fats, seasoning, and meat, fish, or other ingredients as desired. Small portions of this are placed in corn husks or plantain leaves which serve as wrappers to protect the tamales while they are being steamed. They are unwrapped before eating, and the husks or leaves are discarded. The singular is ‘tamal’.
