‘Vol au vent’ *(m) which translates delightfully as ‘flight of the wind’ goes by the same name in English. Vol-au-vents are puff pastry (pâte feuilletée) cases, of varying sizes. Before the pastry is baked, it is scored, and after baking the scored part in the middle is removed, along with some of the soft pastry to make a light pastry case.
